Summary
That we have souls that exist beyond our physical bodies is a proposition that is not supported by any hard evidence, indeed all of the hard evidence suggests that our minds and bodies are intimately linked, and the only reports that might support the concept are vague, anecdotal and can be explained in other ways. With skepticism as our starting point, the most likely answer is that souls do not exist, and the prevalence of the belief is a sign of its primal nature; we just dearly want to have souls.
